Will the gear on your crew change or what? Cause I seen this Samurai armor in a room that looked super epic and it looked like it would fit my Samurai Cow perfect so I wanted to know if they are going to look more epic at some point or if they are going o stay (excuse me) pretty boring and nooby looking?

Companions change gear and looks as you promote them.

You crew's appearance changes when you do their promotion quest. It's not gear you buy or anything, but when they advance to the next "job", the look a little more epic.
